Good Measure Meals - Day 4

On the menu for our fourth full day using Good Measure Meals:
Herb frittata, roasted potatoes, english muffin, and honeydew melon
Crustless crab and spinach quiches, red rice and swiss chard salad, and an oat bran roll
Turkey baked ziti and roasted brussels sprouts
Breakfast - Top left photo - I enjoyed the herb frittata as much as I can enjoy an eggy dish, and I probably enjoyed it mostly because it reminds me of a Japanese omelette which brings back pleasant memories of our cooking class in Japan. The potatoes were delicious and well seasoned (my favorite part of this meal). The honeydew was a bit on the unripe side again. I saved the english muffin for a snack later in the day since the other items filled me up.
Lunch - Top right photo - I am not big on eggy dishes, so two in a day is really pushing it. The crab quiche was tolerable for me, but my husband who is more of an egg enthusiast thought it was good. The red rice and swiss chard salad was delicious; I especially liked the dried apricot, green raisins, and almond toppings. This was another oddly paired meal - The quiche, salad, and roll felt like 3 items thrown together vs. a well-thought out meal.
Dinner - Bottom photo - At first glance, the turkey ziti scared me. It reminded me of lunchroom slop. I was able to get over it and eat a half-serving, but I did not enjoy the texture and the flavor was what I would expect from a canned or frozen dinner. I did not eat the brussels sprouts, although they smelled nice and smoky (I am avoiding certain foods while I breastfeed my baby). Both my husband and his sister enjoyed this meal and had no complaints. Half a portion went into the freezer, so 3 people were able to share this meal and still have leftovers. (Sorry, the photo looks gross.)
